Blueberry Swirl Popsicles

This summer is going to be a hot one, and what better way to cool off with this delicious and, you got it, HEALTHY recipe! These popsicles are sure to make your stomach smile!



2 cups freshly squeezed orange juice
1 cups blueberries
6 dates
(optional: 1 cup kefir or Greek yogurt)


Spread one cup of the orange juice evenly among the popsicle molds. The molds should be filled one-third of the way up. Blend the second cup of orange juice with the blueberries, yogurt and dates. Pour the blueberry liquid slowly into the molds so that it swirls with the orange juice. This will create a lovely contrast of orange and purple when the popsicles are frozen.
As an alternative, you may blend both cups of orange juice with the berries and dates and simply fill the popsicles with the purple smoothie alone as is pictured above. Snap on the lids of the molds, and freeze for 12 hours.

To remove popsicles, hold the molds under hot running water for 30 seconds, and slowly ease the popsicles out of the molds.
